Carrot Tomato Soup

Ingredients
  • Carrot – ½ cup (1 medium sized carrot. I have used the delhi / long carrot)
  • Tomato – 1 cup
  • Onion – 1 small
  • Garlic pods – 4 to 5
  • Basil / Tulsi – 8 to 10 leaves
  • Brown sugar / normal sugar – 3 teaspoon
  • Salt to taste - 1.5 teaspoon (I have used rock salt)
Instructions
  1. Wash all the vegetables properly (suggest to use vinegar / salt water to wash the veggies for kids). Peel the onion & scrap out the carrots. Dice the carrot, tomato and onion into small chunks.
  2. Pressure cook all the veggies along with garlic pods 3 cups of water until soft (2-3 whistles approx).
  3. Once cooled, add the fresh tulsi/basil leaves & blend to a soupy consistency. (The soup can be strained as well. It is an optional step.)
  4. Add salt and sugar. Warm the soup
  5. Serve warm
