Ragi Paal Kozhukattai or Ragi Dumplings in Milk

Ingredients
  • For ragi balls
  • Ragi Flour - ½ cup
  • Rice Flour - ¼ cup
  • Sugar – 2 tablespoon
  • Salt - ¼ teaspoon
  • Milk - ½ cup
  • Water - ¼ cup
  • Ghee – 1 tablespoon
  • For the sauce
  • Milk - 2 cups
  • Sugar - ¼ cup (adjusted as per your taste)
  • Thick Coconut Milk - ½ cup
  • Cardamom Powder - 1 /2 teaspoon
Instructions
  1. Take ragi flour, rice flour, sugar, salt, water, and milk in a bowl and mix well without any lumps.
  2. Now pour this in a kadai or non-stick pan and keep cooking until it starts to leave the sides of the pan. Switch off the flame and add in some ghee. Set aside to cool down.
  3. When it is warm, grease your hands with a little ghee and knead it to soft pliable dough.
  4. Make very tiny balls out of the dough and keep it aside.
  5. Now in a shallow pan, bring milk and sugar to a boil. Once it boils, add the ragi balls in the boiling milk and keep cooking them for 10 mins.
  6. Now add in coconut milk and cardamom powder and mix well. Do not boil after adding coconut milk.
  7. Remove this from flame and let it cool down. It will thicken as it cools down.
