Paal Poli or Milk Poli

Ingredients
  • Semolina - 1 cup
  • Milk - 3 cups
  • Sugar - 1 cup or less
  • Saffron - a pinch
  • Oil - for frying
  • Cardamom powder - a pinch
  • Almonds or pista - to garnish
Instructions
  1. Take semolina in a bowl and knead with water to make dough.
  2. Knead it well, like 15 to 20 minutes so that the semolina becomes soft and the dough becomes whole.
  3. Keep this covered for about an hour.
  4. Take the dough and knead it well again with the fingers folded.
  5. Roll the dough and cut into pooris. You can sprinkle a little maida for dusting.
  6. Deep fry them in oil and remove excess oil in kitchen towel. Keep them in a plate.
  7. Take the milk in a thick-bottomed pan and bring it to a boil. Once it boils well, the milk starts to thicken. Add sugar and continue boiling atleast until the milk reduces to ⅔rd.
  8. Add saffron and cardamom powder and remove from flame.
  9. Keep some milk for aside, take the rest and add this milk over the pooris in the plate.
  10. Flip the pooris and make them get soaked well on both sides.
  11. Now place the soaked pooris to the serving bowl.
  12. Pour the milk kept aside on top of the soaked poori. Sprinkle grated badam or pistas and serve.
