Ripe Mango Chutney Recipe

Ingredients
  • Ripe mango - ½ cup
  • Desiccated coconut - ⅓ cup
  • Powdered jaggery or gud – 1 tablespoon
  • Lemon juice – 1 teaspoon
  • Cumin powder – 1 teaspoon
  • Mint or pudina leaves – 6 to 8
  • Green chili - 1 (optional)
  • Rock salt - to taste (I have added 1 teaspoon)
Instructions
  1. Peel the mango and dice or chop the mango finely.
  2. In a blender, place coconut, cumin powder, jaggery, pudina leaves, green chilli and salt. Pulse until finely ground. Do this in spurts with a gap of a few seconds.
  3. Combine the mangoes and the coconut spice mix. Add the lemon juice and mix well again.
  4. Yummy chutney is ready to be served.
