Ingredients
  • Penne pasta – 1 cup
  • Red tomatoes – 3 medium size
  • Garlic – 4 pods
  • Onion – 2 tablespoon grated
  • Beetroot – 1 tablespoon finely grated
  • Olive oil – 1.5 tablespoon
  • Sugar – ½ teaspoon
  • Chilli flakes – ½ teaspoon (optional)
  • Oregano – ½ teaspoon (I have used dried oregano)
  • Basil leaves – 4 to 5
  • Cheese – 2 tablespoon
  • Salt to taste
Instructions
  1. Blanch the tomatoes – Boil water in pan enough to dip the tomatoes. Using a sharp knife, cut a shallow X on the bottom of each tomato.
  2. Add the tomatoes to the boiling water and let the tomatoes cook for a 3 to 4 minutes until the tomato skins split open. Drain out the water and peel the tomatoes.
  3. Puree the blanched tomatoes. To get rid of seeds, pass the puree through a sieve
  4. Cook pasta - Boil water for pasta with a little salt. Add the penne pasta and cook based on instructions on the pasta .The cooking time for pasta varies based on the brand. We need to cook soft yet firm pasta. Drain the water and keep aside.
  5. Heat oil in a pan and add the garlic, beetroot and onion. One can also add in the chilli flakes at this stage (if using). Cook for 3 to 4 minutes.
  6. Once the onions are cooked add the tomato puree. Let the puree cook for 3 to 4 minutes
  7. Add in the herbs, oregano and basil. Add sugar and salt. Mix everything well.
  8. Add the cooked pasta to the sauce and mix everything well. Cook for 2 more minutes and the pasta is ready to be plated.
  9. Transfer the pasta into the serving plate. Grate cheese on the top and serve.
