Curd Rice or Thayir Sadam

Ingredients
  • Rice (ponni or kolam) – 1 cup
  • Curd – 1 ½ cup
  • Milk – 2 tablespoon
  • Carrot – ½ finely chopped or grated
  • Cucumber - ½ finely chopped or grated
  • Ginger – ½ inch finely chopped
  • Mustard seeds – 1 teaspoon
  • Curry leaves – a few
  • Urad dal – 1 teaspoon
  • Red chillies – 2
  • Fresh coriander leaves – a few finely chopped
Instructions
  1. Wash and cook rice in a pressure cooker for 4 to 6 whistles.
  2. Once cooled down completely add milk to it
  3. Whisk curd to a creamy consistency with salt and add to the rice
  4. Add grated cucumber, carrots and fresh coriander leaves. Mix well
  5. Make a tempering of mustard seeds, curry leaves, urad dal and red chillies. Pour over the rice
  6. Serve as it is or refrigerate for 5 to 10 minutes
