Total time:
Serves: 1 cup
Ingredients
Almonds – ½ cup
Lump or granulated sugar – ¼ cup
Cardamom powder – 1 teaspoon
Dry ginger powder – ½ teaspoon
Saffron – 4 strands
Water – 2.5 cups
Unsweetened cocoa powder – 1.5 tbsp for half cup almond powder (for chocolate almond powder)
Instructions
Bring 2.5 cups of water to boiling point and switch off the flame
Put almonds to this hot water for 2-3 min, not more than the specified time.
Drain them and put them immediately to a pan of normal cool water
Drain them completely using a colander
Transfer and spread it to kitchen tissues or even a clean cotton cloth will do to absorb the excess water content
Now just remove the skin from all the almonds by using your fingers. The skin will come off easily now
Heat a wide pan or kadai on medium flame and lightly roast drained almonds for 3 to 4 min to make it completely water free
Let it cool completely
Grind and powder all the ingredients using mixie jar in batches. Please do not grind more than 25 sec each time to avoid overheating of mixie and to avoid the release of oil from almonds
Allow the mixie to cool down, then again you can grind
Allow it to cool completely and keep it in air tight container
For chocolate almond powder, add 1.5 tbsp unsweetened cocoa powder to half cup of prepared almond powder and mix it nicely. Keep it in air tight container
